Vanyas Most amazing stuffing!

Ingredients:

1 big box of stuffing or two regular size boxes of stuffing

2 can of low sodium chicken broth

Veggies Spices

Half an onion Parsley

5 to 8 cloves of garlic Black pepper

2 stalks of celery Red/Chili pepper to taste

1/2 cup of broccoli Basil

1/2 cup of carrots Rosemary

2/3 cup of portabella mushrooms 1/3 cup of cheddar cheese

1/3 stick of butter

Olive oil

(Have aluminum foil at hand)

1). Roast several cloves of garlic at 425 degrees for 25 to 30 minutes. You may want to check the garlic’s softness with a fork from time to time.

Take out a stretch of two aluminum foil pieces that are about seven inches long. Place one on top of the other for double backing in the oven later.

Place your garlic cloves onto the double aluminum piece. Bunch up the aluminum around the garlic, making a little baggie.

Add black pepper, basil, red pepper flakes to taste. Add 1/4 stick of butter and enough olive oil to cover the garlic. Fold the aluminum so that it is basically sealed. Place in oven for allotted time. You may want to check with a fork after twenty to twenty five minutes testing out the softness of the garlic. Once the garlic cloves are tender, at around twenty five to thirty minutes, turn oven off and take garlic out to cool.

Once cooled a bit, the garlic are easy to pull out of the cloves. Mash the garlic and put aside.

2). Cut up veggies finely:

Onion, celery, broccoli, carrots, portabella mushrooms, portabella mushrooms.

SautĆ© the veggies, adding the portabella’s a little later as they cook more swiftly.

3). Seasoning for the vegetable sautƩ:

Parsley, black and red pepper, basil, paprika and rosemary.

4). Microwave about one cup of frozen peas. Add to the sautƩ.

5). Add mashed garlic to the mixture. You may also add a couple tablespoons of the garlic butter/oil that the garlic has cooked in to the veggie sautƩ.

6). Heat the chicken broth. You will need about 1/2 to 1 cup more of the broth than the recipe of stuffing calls for in order to accommodate for the vegetable sautƩ.

7). Slowly start pouring/mixing stuffing over the veggie sautƩ. Keep pouring and stirring until you see the perfect consistency of the stuffing.

Not soggy, not dry. -fluffy

8). Sprinkle the cheddar cheese sparingly across your stuffing pot.
